Ingredients
- 1 London Broil Steak - 4 Pack
- 4 Medium Red Onions, Cut into 16 Wedges Each
- 2 Pounds Asparagus, trimmed
- 6 Tablespoons Prepared Red Wine Vinaigrette
- Salt and Pepper to Taste
- 2/3 Cups Prepared Red Wine Vinaigrette (for Marinade)
- 1 Teaspoon Dried Basil Leaves, Crushed (for Marinade)
Instructions
Chop 8 of the onion wedges.
Combine marinade ingredients and chopped onion in small bowl.
Place steak and marinade in food-safe plastic bag; turn steak to coat.
Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
Thread remaining 8 onion wedges onto four 12-inch metal skewers.
Remove steak from marinade; discard marinade.
Place steak in center of grill over medium, ash-covered coals; arrange onion kabobs and asparagus on grill around steak.
Grill steak, covered, 26 to 30 minutes (over medium heat on preheated gas grill, 30 to 33 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
Grill onion wedges, covered, 30 to 40 minutes, turning occasionally (Gas grilling times remain the same.); grill asparagus, covered, 12 to 20 minutes (16 to 24 minutes on gas grill) or until crisp-tender, turning occasionally.
Remove onions from skewers.
Toss onions and asparagus with 6 tablespoons vinaigrette.
Season steaks with salt and pepper, as desired. Serve with vegetables.
