Tomato Roasted Flat Iron Steak with Summer Herbs

The day before, assemble the marinade blend of tomato paste, chopped herbs, minced garlic and soy sauce. Season the Flat Iron Steak with pepper and salt. In a glass casserole dish, use a spatula and smooth over steak. Seal using plastic wrap and let marinate in refrigerator for a day; turn once or twice. To grill the steak, heat your grill to high, then reduce heat a bit and grill the steak about 6 minutes on each side. Let stand tented in aluminum foil for about 5 minutes. Slice diagonally and serve with greens and mashed potatoes. Enjoy!

Ingredients for Marinade:

- 1-6 ounce can of tomato paste
- 1/2 cup fresh herbs; oregano, basil and parsley are excellent
- 3 tablespoons soy sauce
- 2 cloves of garlic minced
